طبخة مندي الدجاج مع الأرز بطريقة سهلة واحترافية جداً! Chicken mandi with rice in a very easy and professional way! المكونات:  ثلاث أنصاف دجاج  (150 جرام) بصل مفروم  ملعقة كبيرة ثوم  أعواد القرفة، هيل، قرنفل، أوراق الغار  أربعة حبات فلفل رومي صغيرة، فلفل حار كامل  كوبان من الأرز البسمتي طويل الحبة  زعفران أو لون زعفران، كركم، بابريكا، كمون  أربعة أكواب ماء  ملعقة صغيرة من بذور الكمون  نصف ملعقة صغيرة بذور كزبرة  نصف ملعقة صغيرة بذور فلفل أسود  الملح والفلفل الأسود حسب الذوق  زيت نباتي، زيت زيتون  مرقة خضار  الفحم للتدخين  تعليمات:  نخلط الزعفران، والكركم، والبابريكا، والكمون مع الماء الساخن في وعاء صغير.  توضع جانبا لتبرد.  في مقلاة، يشوح البصل والثوم المفروم.  أضف القرفة والهيل والقرنفل وأوراق الغار.  انقلة إلى مقلاة الشوي مع الرف.  أضيفي بذور الكمون، وبذور الكزبرة، والفلفل الأسود.  ضعي الفلفل الحلو الصغير والفلفل الحار الكامل.  صب 4 أكواب من الماء.  ضع الدجاج على الرف.  نتبل بالملح والفلفل الأسود والصلصة المحضرة.  رشي زيت الزيتون فوق الدجاج.  قم بتغطية صينية التحميص بورق البرشمان والقصدير.  اشوي على حرارة 400 درجة فهرنهايت (200 درجة مئوية) لمدة 45 دقيقة.  نغسل الأرز البسمتي وننقعه لمدة 20 دقيقة.  بعد 45 دقيقة نخرج الدجاج.  صفي الأرز وأضيفيه إلى مقلاة التحميص.  يتبل بالملح ومرق الخضار.  أعد الرف إلى الخلف وقم بتغطية صينية التحميص وإعادتها إلى الفرن لمدة 25 دقيقة أخرى.  بعد 25 دقيقة، أعطي الدجاج والأرز نكهة الدخان باستخدام الفحم المشتعل والزيت النباتي.  قم بتغطية صينية التحميص لمدة 5 دقائق.  استمتع بدجاج المندي اللذيذ! Ingredients: Three half chickens (150g) chopped onion One tbsp garlic Cinnamon sticks, cardamom, cloves, bay leaves Mini bell peppers, whole hot peppers Two cups long grain basmati rice Saffron or saffron color, turmeric, paprika, cumin Four cups water One tsp cumin seeds Half a tsp coriander seeds Half a tsp black pepper seeds Salt and black pepper to taste Vegetable oil, olive oil Vegetable bouillon Charcoal for smoking Instructions: Mix saffron, turmeric, paprika, and cumin with hot water in a small bowl. Set aside to cool. In a pan, sauté chopped onion and garlic. Add cinnamon, cardamom, cloves, and bay leaves. Transfer to a roasting pan with a rack. Add cumin seeds, coriander seeds, and black pepper. Place mini bell peppers and whole hot peppers. Pour in 4 cups of water. Place the chicken on the rack. Season with salt, black pepper, and the prepared marinade. Drizzle with olive oil on top of the chicken. Cover the roasting pan with parchment paper and foil. Roast at 400°F (200°C) for 45 minutes. Wash and soak basmati rice for 20 minutes. After 45 minutes, remove the chicken. Strain rice and add it to the roasting pan. Season with salt and vegetable bouillon. Put the rack back and cover the roasting pan and return it to the oven for another 25 minutes. After 25 minutes, give the chicken and rice a smoky flavor using lit charcoal and vegetable oil.
