*자세한 설명은 자막을 켜주세요. 안녕하세요 조꽁드 입니다. 어제 커뮤니티란에 모자이크 처리된 사진을 올렸었죠~~. 바로 이번주 케이크는 체리 생크림 케이크 였습니다!! 그리고 얼마전에는 체리케이크 라즈베리 케이크 복숭아 케이크 중 어떤 생크림 케이크를 원하시는지 설문조사를 했었는데요. 복숭아 케이크가 가장 많은 표를 받았어요. 그런데 꽤 많은분이 세가지 모두 보고싶다고 하셨어요. 아이 또 맘 약한 제가 다 만들기로 결정했죠. 그런데 복숭아는 아직 마트에 나오지 않고 있어서요. 체리 케이크 먼저 만들어 보았습니다. 레시피는 간단합니다. 폭신하고 부들한 초코제누아즈 종결자 시트와, 체리퓨레와 화이트 초콜릿을 섞은 생크림을 만들었습니다. 저의 초코 제누아즈 종결자 레시피는 아주 오래전 영상으로 따로 만든적이 있었는데요. 실패확률 없고 폭신해서 많은 분들이 좋아하셨죠 그런데 이번에 박력분의 양을 늘리고 바닐라와 소금을 첨가하는 약간의 조정이 있습니다. 그리고 컨벡션 뿐 아니라 열선오븐으로 구울때 필요한 온도도 알려 드립니다. 영상에서 만드는 법 자세히 나와있으니 확인하세요. 체리는 샌딩용으로는 미국산 생과를 사용했지만 퓨레용으로는 자연원 에서 나온 이탈리아산 유기농 스위트 체리를 사용했습니다. 냉동 체리 보기 -- http://m.site.naver.com/0P991 여러 냉동 체리를 사용해 보았지만 제품이 약간 체리의 향이 좀더 있어서 가장 맛있었어요. 비교해보면 압니다. 물론 퓨레용으로 생과를 사용해도 당연히 됩니다. ^^ 흔히 구할 수 있는 다크 체리 생과는 약간 밍밍할 수 있습니다. 이럴 땐 레몬즙을 좀 더 넣거나 레몬즙 대신 오렌지즙과 오렌지 제스트를 넣으면 맛있습니다. 화이트 초콜릿에 뜨거운 체리퓨레(약 80도) 그리고 생크림을 섞어서 냉동실에서 차게 만듭니다. 생크림을 섞을때는 약간 데운 미지근한 (30~40도정도) 생크림을 먼저 섞고 차가운 크림을 다시 섞어 줍니다. 바로 차가운 생크림을 넣으면 초콜릿이 굳을수 있기 때문입니다. 그런데 여기서 생크림이 또 너무 뜨거우면 나중에 휘핑이 잘 안될 수 있으니 유의 하세요. 마지막에 올린 데코용 체리는 레이니어 입니다. 마침 시어머님이 보내주신 체리가 있었는데, 색도 이쁘고 둘이 예쁘게 붙어 있어서 좋았습니다. 그럼 어서 만들어 보시죠~~! ————————————————————————————————— ♥︎ 조꽁드 Joconde’s Baking 온라인베이킹클래스: https://bit.ly/3ww7HS4 이메일: [email protected] 인스타: https://www.instagram.com/joconde_73 블로그: https://blog.naver.com/joconde_hur73 유튜브: https://www.youtube.com/c/조꽁드Jocondesbaking ————————————————————————————————— 재료 ♥︎ 초코제누아즈 (1호사이즈 15cm 원형팬) 박력분 57g 코코아파우더 11g(발로나) 소금 1g 달걀 95g + 설탕 60g 달걀흰자 43g + 설탕 40g 생크림 28g(서울우유) 바닐라 익스트랙 4g *2호는 1.5배, 3호는 2배 계량 하세요. 온도는 같고 시간은 꼬치테스트 해서 조절하세요. ♥︎ 체리 퓨레 냉동체리 130g (자연원) 설탕 42g 옥수수전분 1.5g 레몬즙 13g ♥︎ 체리 생크림 화이트 초콜릿 60g(깔리바우트) 체리퓨레 80g 데운생크림 60g (서울우유) 차가운생크림 160g(서울우유) 키르쉬 2g (디종) 식용색소 로즈색 약간(윌튼) ♥︎ 화이트 레이어 부분 생크림 160g 설탕 14g 키르쉬 2g 체리 생과(씨 빼고 반으로 나눈것) 미국산 ♥︎ 설탕 시럽 설탕 20g 물 60g 키르쉬 5g(디종) ♥︎ 데코체리 레이니어 체리 Cherry cake. This week's cake was the Cherry Whipped Cream cake! And a while ago, I did a survey on what cream cake you'd like: cherry cake, raspberry cake, peach cake. The peach cake received the most votes. But many others have said they want to see the three. I made the decision to do them all because I always thank you. However, peaches are not yet available in the market. I made a cherry cake first. It's an easy recipe. I made a soft and fluffy chocolate sponge, and whipped cream mixed with cherry puree and white chocolate. My chocolate sponge recipe was already in my video a long time ago. It was so soft, moist, that many people loved it. This time there are some adjustments to increase the amount of cake flour and add vanilla and salt. If you have all-purpose flour only, then remove 10% of flour and add same amount of corn flour instead. The video explains how making it in detail, so check it out. For the cherries, I used fresh cherries for the white layer, but for the puree, I used organic frozen sweet cherries from Italia. View frozen cherries -- http://m.site.naver.com/0P991 I tried several frozen cherries, but this product was the best because it had a bit more cherry flavor. Of course, you can also use fresh cherries for puree. ^^ But, I felt that common dark cherries have less cherry flavor. In this case, add a little more lemon juice. Or add orange juice and orange zest instead of lemon juice. Mix white chocolate with hot cherry puree (about 80℃) and whipped cream and chill in the freezer. When mixing the whipped cream, mix the small amount of lukewarm (about 30-40℃) heavy cream first and then the cold cream again. This is because adding cold whipped cream can harden the chocolate. However, if the heavy cream is too hot here, it may not be whipped well later. The last cherry for decoration is the Rainer cherries. Luckily, there was a cherry that my mother-in-law sent me, and the color was pretty, and it was nice that the two were attached beautifully. Then let's make it~! Ingredients ♥︎ Chocolate sponge cake (⌀15cm/6 inch round pan) 57g soft flour 11g cocoa powder (Valona) 1 g of salt 95g eggs + 60g sugar 43g egg white + 40g sugar 28g fresh cream (Seoul Milk) 4g vanilla extract *Measure Ingredients 1.5 times for 7inch pan and 2 times for 9inch pan. The oven temperature is the same, and the baking time must be adjusted by using a skewer. ♥︎ Cherry puree 130g frozen cherries 42 g sugar 1.5g Corn Starch 13g lemon juice ♥︎ Cherry whipped cream 60g white chocolate (Callebaut) 80g cherry puree 60g lukewarm heavy cream 160g cold heavy cream 2g Kirsch (Dijon) A little bit of food coloring rose (Wilton) ♥︎ White layer part 160g heavy cream 14g sugar Kirsch 2g Fresh cherry (pitted and halved) ♥︎ Sugar syrup 20g sugar 6 g water 5g Kirsch (Dijon) *Boil sugar and water and let cool.
