⬇️⬇️English recipe follows⬇️⬇️ 胡椒豬肚雞湯 材料: 熟豬肚一個 急凍雞髀3隻(已解凍) 紅蘿蔔一個 粟米一支 支竹適量(已浸軟) 薑一小舊 白胡椒粒2湯匙 黑胡椒粒一茶匙 處理: 1. 豬肚,打橫一開二。 2. 大火煲滾清水一升,放豬肚煲10分鐘。 3. 雞髀,去皮,除脂肪,一開三。 4. 雞件,加入粗鹽一湯匙,乸10分鐘,去除雪味、腥味,及加入少許鹹味。 5. 豬肚,已煲了10分鐘,夾起,浸清水降溫。 6. 豬肚,切件,同時除去脂肪,放入大碗內。 7. 豬肚,加入: a. 粗鹽一湯匙 b. 白醋一湯匙 乸10分鐘,去除豬羶味。 8. 紅蘿蔔,去皮,切一舊舊。 9. 粟米,去皮,切一舊舊。 10. 薑,去皮,切片。 11. 白胡椒粒,取出一湯匙,放入一個杯,另外取出一湯匙,壓碎,放入另一個杯。 12. 黑胡椒,取出半茶匙,壓碎,以增加香味。 13. 豬肚,已乸了10分鐘,清水沖洗2至3次,直至完全乾淨,擎乾水。 烹調: 1. 白鑊,大火烘乾豬肚。 2. 另一 邊,在煲內煲滾清水3升,加入: a. 紅蘿蔔 b. 粟米 c. 薑片 d. 胡椒粒一湯匙 e. 支竹 大火煲滾。 3. 豬肚已烘乾,放入湯內,大火滾起,轉中慢火,煲50分鐘。 4. 雞件,清水沖洗乾淨,擎乾水。 5. 湯已煲了50分鐘,檢查豬肚是否可以用筷子穿過。 6. 試一試味,加入適量胡椒。 7. 加入雞髀,冚蓋,大火滾起,轉中慢火,煲15分鐘。 8. 完成,可享用。 Hog stomach and chicken soup with pepper Ingredients: Hog stomach (cooked) 1 No. Frozen chicken legs 3 Nos. (already defrosted) Carrot 1 No. Sweet corn 1 No. Beancurd appropriate amount (already soaked) Ginger (small) 1 No. White pepper 2 tbsp Black pepper 1 tsp Preparation: 1. Hog stomach, divide it into 2 shares horizontally. 2. Heat up 1L of water at high flame. Boil the hog stomach for 10 minutes. 3. Chicken legs, remove skin and fat. Divide each into 3 shares. 4. Chicken pieces, add in 1 tbsp of cooking salt, season for 10 minutes, to remove unpleasant smells and add some salty tastes to it. 5. Hog stomach, has been boiled for 10 minutes, pick it up. Soak in tap water to reduce temperature. 6. Hog stomach, cut in pieces. Remove the fat at the same time. Put in a big bowl. 7. Hog stomach, add in: a. Cooking salt 1 tbsp b. White vinegar 1 tbsp Season for 10 minutes, to remove unpleasant smells. 8. Carrot, get it peeled. Cut in pieces. 9. Sweet corn, get it peeled. Cut in pieces. 10. Ginger, get it peeled and sliced. 11. White pepper, take 1 tbsp. Put it in a glass. Take 1 tbsp, get it squashed. Put it into another glass. 12. Black pepper, take out 0.5 tsp. Get it squashed to increase the flavour. 13. Hog stomach, has been seasoned for 10 minutes, rinse twice or thrice, until it is totally clean. Drain. Steps: 1. Plain wok, fry the hog stomach at high flame until it is dry. 2. On the other side, heat up 3L of water at high flame in pot. Add in: a. Carrot b. Sweet corn c. Ginger slices d. Pepper 1 tbsp e. Beancurd Heat up at high flame. 3. Hog stomach has been dried up, put into the soup. Heat up at high flame. Turn to medium-low flame and boil for 50 minutes. 4. Chicken pieces, rinse thoroughly. Drain. 5. Soup has been boiled for 50 minutes, check if the hog stomach can be pinched through with a pair of chopsticks. 6. Check the taste. Add in appropriate amount of pepper. 7. Add in chicken legs. Cover up the pot. Heat up at high flame. Turn to medium-low flame and boil for 15 minutes. 8. Complete.
