今回は色々なナッツをたっぷり使ったフロランタンをご紹介します。 フロランタンと言えばアーモンドスライスを使うレシピが多いですが、色々なナッツを使うことで 見た目や食感が楽しめるレシピにしました。 また、ヌガーには生クリームを使っていませんので少量の生クリームも買わずに作れます！ 音声解説なしバージョンはこちらからご覧ください↓ https://youtu.be/YnzlmNEuV7s *********************************************** 日本全国、海外の方でもオンラインで受講できるお菓子教室をやっています！ オンラインスイーツスクールSaki.＋公式HP　　http://saki-plus.com/ 「自己流のお菓子作りからワンランク上のお菓子作りへ」 無料メルマガ　 http://saki-plus.com/maillesson/ Instagram　https://www.instagram.com/saki.plus/?hl=ja その他、アドバイザー・レシピ開発等も行っています。 《サブチャンネル》 パティシエCamp！【本気キャンプ飯】 https://www.youtube.com/channel/UCYCJH7ZRScMWD7xl6Ynmj0Q *********************************************** 【目次】 00:00 オープニング（Opening） 1:05 レシピ（Recipe） 1:20 型準備（Mold preparation） 1:40 クッキー生地（Cookies dough） 6:32 ナッツ準備（Nuts preparation） 7:02 ヌガー（Nougat） 9:38 カット（Cut） 【材料】　18×18cm角型　1台分 ■生地 無塩バター　65ｇ 粉糖　40ｇ 全卵　20g アーモンドプードル　15ｇ 薄力粉　55ｇ 強力粉　55g ■ヌガー 水あめ　３３ｇ グラニュー糖　45ｇ 牛乳　15g 無塩バター　45g お好みのナッツ　130g ※アーモンド、マカダミア、カシューナッツ、クルミ、カボチャの種、ひまわりの種を使いました 【下準備】 ・型に型紙を敷いておく ・バターを室温に出しておく ・生地を冷凍で冷やしている間にオーブンを170℃に予熱しておく 【作り方】 ①バターをゴムベラでなめらかな状態にし、粉糖を入れて混ぜる。粉が舞うので始めは切るように、徐々に混ぜ込んでいく。アーモンドプードルも加えて混ぜる。 ②全卵を2回に分けて加えてしっかり混ぜる。 ③ふるった薄力粉・強力粉をを一度に加え、切るように混ぜる。ある程度そぼろ状にまとまればOK。 ④生地がまとまったらボウルの底に押し付けるようにしてなめらかな状態にする。 ⑤18㎝幅のビニールブル袋に入れて伸ばし、冷凍庫で20分程度休ませる。 ※オーブンを170℃に予熱する ⑥生地が固まったら袋から取り出して型紙の上に置き、ピケをする。170℃のオーブンで30分焼成。表面に焼い色が軽く付けばOK. ⑦小鍋にナッツ以外の材料をいれて中火にかけ、沸騰させる。 ⑧ナッツを加えてとろみがつくまで煮詰める。 ※煮詰めすぎると固くなるので注意です ⑨土台生地の上に流し表面を均して160℃で30分焼成する。 ※平らにすることでカットしやすくなります ⑩ヌガーにしっかり色が入ったらオーブンから出し、粗熱が取れるまで冷ます。 ⑪裏返してカットし、表に戻して完全に冷ます。 18 cm square mold for 1 unit ■Dough 65g unsalted butter 40g icing sugar 20g whole egg 15g almond powder 55g cake flour 55g bread flour ■Nougat 33g glucose 45g granulated sugar 15g milk 45g unsalted butter 130g nuts of your choice I used almonds, macadamias, cashews, walnuts, pumpkin seeds and sunflower seeds. Preparation ・Line a mold with paper. ・Let the butter come to room temperature. ・Preheat the oven to 170°C while freezing and chilling the dough. How to make it (1)Make butter smooth with a rubber spatula and add icing sugar. Add the almond powder and mix. (2)Add the whole eggs in two parts and mix thoroughly. (3) Add the sifted flour and flour at once, and mix as you fold it (4)When the dough comes together, press it to the bottom of the bowl to make it smooth. (5)Put the dough in an 18cm wide plastic bag, roll it out, and let it rest in the freezer for about 20 minutes. Preheat the oven to 170°C. (6) When the dough has set, remove it from the bag, place it on a paper pattern, and picket it. Bake in the oven at 170℃ for 30 minutes, until the surface is lightly browned. (7)Place all ingredients except nuts in a small saucepan over medium heat and bring to a boil. (8)Add the nuts and boil until thickened. Be careful not to boil it too much or it will become hard. (9)Pour over the base dough, level the surface, and bake at 160℃ for 30 minutes. Bake for 30 minutes at 160°C. Flatten the dough to make it easier to cut. (10)When the nougat is well browned, take it out of the oven and let it cool until the heat is removed.
