After that it’s moo ping (grilled pork skewers over charcoal) across the road, eaten on the street, standing up, like you’re supposed to. Then we hit a tiny local shop doing absolute madness with crab. They’re cooking what might be Thailand’s ultimate basil stir fry: a GIANT crab pad kaprao (ผัดกะเพราปูเนื้อ) – just pure crab meat, holy basil, chilli, garlic. No vegetables, no filler. I also order their crab omelette. It looks beautiful and it’s packed with crab, super crispy edges… but honestly, it was a bit over, slightly dry. We can't win them all! Next stop: southern-style heaven. แกงปูใบชะพลู (gaeng puu bai chaplu) – rich, yellow crab curry with wild betel leaf. Spicy, coconutty, perfect with rice. And at this same place I get ไก่กระเทียม (gai gratiam) – fried chicken with garlic – and it’s unreal. Juicy chicken under a mountain of crunchy garlic. Proper Thai comfort food. We wrap the day with what I’m calling the best grilled chicken I’ve ever eaten. Not “best in Hua Hin”. Best, full stop.
