Add the following ingredients to the pot: One chopped onion (about 150 grams) One chopped bell pepper (about 120 grams) One whole head of garlic Whole hot peppers (optional) Two cinnamon sticks, four bay leaves, and two dried limes One teaspoon each of cumin seeds, black peppercorns, and coriander seeds One teaspoon each of cardamom pods and cloves Cover and cook over medium heat for 1.5 hours. After 1.5 hours, stir in half a tablespoon of salt, cover, and let it cook for another 30 minutes. Remove the lamb from the pot, cover it with foil, and set aside. 2. Prepare the Saffron Mixture and Strain the Broth: Take about one fourth of a cup of the broth and transfer it to a small bowl. Mix it with one fourth of a teaspoon of saffron, saffron coloring, or Sazon. Set aside. Strain the remaining broth through a fine sieve to remove any solids. Set the broth aside for cooking the rice. 3. Cook the Rice: Heat a large pan over medium heat and add two tablespoons of vegetable oil. Sauté one chopped onion (about 140 grams) until soft. Add the following ingredients: One teaspoon of grated garlic Grated carrots (100 grams) Two diced tomatoes (about 220 grams) Stir in two cups of washed and soaked basmati rice (about 400 grams). Add half a teaspoon each of ginger, paprika, cumin, coriander, black pepper, and turmeric. Pour in three cups of the strained broth, cover, and cook on medium heat until the liquid reduces. Lower the heat and let the rice simmer for 20 minutes. 4. Broil the Lamb: Brush the reserved saffron mixture over the lamb pieces. Place the lamb on a baking tray and broil in the oven until golden and slightly crispy. 5. Prepare the Garnish: Heat a small pan over medium heat with one tablespoon of vegetable oil.
