In this tutorial, I'm showing you a foolproof method to create unbelievably tender, fall-off-the-bone chicken and incredibly fragrant, spiced rice using just your regular stovetop and pots. We're unlocking the secrets of the classic Mandi marinade and the key technique for that signature smoky flavor (the Dukhoon or Bakhoor), all without any fancy equipment. Here’s what you’ll need, divided for the chicken and the rice. ■ Step: 01 **(making Spices mixture-for chicken marination)** •Coriander: 2 tbsp •Cumin/zera : 1 tsp •Black pepper: 1 tsp •Fennel/sonf seeds: 1 tsp •Cloves/loung :4-5 •Javitri (mace):1 normal size •Badi elaichi (cardamom):1 •Choti elaichi (green cardamom):2-3 •Darchini (cinnamon): 1 normal size ♦Toast the spices. ♦Grind them in the grinder jar. ♦Once the spices are prepared, reserve 3 tablespoons for immediate use. The remainder can be stored. ■ Step: 02 **(Chicken Marination)** •Spice mixture: 3 tbsp •Salt:1 tsp •Red chili powder: 1 tsp •Turmeric/haldi: 1/4 tsp •Ginger garlic paste : 1 & 1/2 tsp •Lemon juice:1 tbsp •Orange food color: 1 pinch •Red food color : 1 pinch ♦Take 2 chicken thighs and rub the spices onto them. ♦Now Let it rest & marinate for 30 minutes. ■ Step: 03 **(Roast Chicken in a Pan)** •Oil: 2 tbsp ♦Flip after 2-3 minutes & repeat! ♦Now cover it & cook it on low flame for 8-10 minutes! ♦Grill the chicken directly over the flame. ■ Step: 04 **(Making green sauce)** ♦Making the sauce is an essential part of preparing Arabic mandi! •Tomato: 1 medium size •Green chilies: 2-3 •Garlic cloves: 2-3 •Fresh coriander •Lemon juice: 1 lemon ♦Now, make the sauce using a grinder & add a pinch of salt! ■ Step: 05 **(Soaking Rice)** •Rice :2 cup ♦Now, wash it thoroughly & then soak it for 15 minutes. ■ Step: 06 **(Roasting Nuts)** •Oil: 1 tbsp ♦We got some almonds, cashews, pistachios, & raisins. ■ Step: 07 **(Finalizing Chicken Arabic Mandi)** •Oil: 1/2 cup •Onion cut: 1 medium size •Badiyan ka phool (star anise):2 •Ginger garlic paste :1 tsp •Green chili paste:1 tbsp •Chicken cubes: 1 •Lemon juice:1 tsp •salt : 1 tsp •Water: 3 cup ♦Add soaked rice ♦Add roasted chicken pieces •Food color yellow: 1 tsp ♦Now cover it & cook it on low flame for 20 minutes! ♦Place foil paper, Add burned coil & drizzle a drop of oil ♦Now cover it for 5 minutes! ♦Your chicken mandi is now ready to serve.
