Video Description

In this video, I venture out into the wilderness of my garden to do a bit of campfire cooking. I have set up my trusty homemade baker tent (apt!) in a quiet corner amongst the bushes with a fire pit in order to continue filming during the current crisis and lockdown - the perfect retreat! After making and hand stretching a simple bread dough, I use my biggest Dutch oven to prove the dough and then bake a delicious pizza over the campfire. Wood fired pizza is simply the best! Links Petromax ft12 Dutch Oven https://www.petromax-shop.de/petromax_en/petromax-feuertopf-ft12.html Tjm Metalworks Mini Fire Anchor https://www.etsy.com/uk/listing/658613152/the-original-mini-grill-fire-anchor?ref=shop_home_active_1&crt=1 Bread Recipe 1 Ib plain flour (450g) 1 lb strong white bread flour (450g) 1 oz dried yeast (28g) 1 oz sugar (28g) 1 oz salt (I only use 1/2 tsp) 1 (imperial) pint tepid water ( 568ml or 1 1/5 US pint) Mix a little of your water with the sugar and yeast and set aside (it’ll start to froth as the yeast feeds off the sugar) Combine the flour and salt in a bowl or large zip-lock bag Make a well in the middle of the flour mix and add the yeast mixture, a little at a time, combining with the dry ingredients Keep adding the remainder of the water, mixing all the time Once it is all combined, clear a space, roll up your sleeves and get ready to get physical! Kneed the dough for at least 5 minutes, folding and pushing it to create stretch and structure in the dough Place the dough in a warm place to prove - it needs to double in size. Once proven, knock the air back out and kneed again. Cut into 8 rounds, roll out and stretch to the size you like. If you like, you can part bake your bases at this point, other wise carry on to the next stage Assemble your pizzas, adding toppings AFTER the cheese! Season. Bake in a hot oven or dutch oven until golden brown and crispy.
