Happy Chinese New Year! 🧧 It was my first time cooking all 8 of these dishes… it was INTENSE!! But watching the table slowly fill up was the best feeling :) 💚 Recipes 💚 Dish 1: Garlic Shrimp Glass Noodles (Wealth & Prosperity) -Soak glass noodles until soft -Pour hot oil over garlic and fresh chili, add light soy sauce x2, oyster sauce x1, salt, sugar and white pepper -Wrap glass noodles around shrimp -Lay the sauce over and steam for 8 mins -Sprinkle spring onion and pour over hot oil -Drizzle some soy sauce on top Dish 2: Four Joy Meatballs (Happiness & Reunion) -Mix minced pork with white pepper, sugar, salt, cornstarch and egg -Beat it in one direction until sticky -Add ginger and chive water and beat again -Slap the mince in your hands to form a big ball -Fry on high heat for 1 min on each side -Transfer to a large pot, add ginger, chive, bay leaf, anise, rock sugar, light soy sauce, oyster sauce, cooking wine and salt, add water to cover all meatballs and stew on low fire for 2h -Reduce 1/3 of the stock in a pan, add starch water to thicken the sauce Dish 3: Pak Choy with Shiitake Mushrooms (Prosperity Blooming) -Blanch pak choy in boiling water with salt and oil -Mix light soy sauce x2, oyster sauce, cornstarch and water for the sauce -Pan fry garlic and shiitake mushrooms and add in the sauce, pan fry until it thickens -Lay over mushrooms and drizzle the sauce Dish 4: Braised & Roasted Pork Trotters (Grabbing Wealth) -Boil the pork trotters in cold water with ginger, chive and cooking wine, then wash them -Transfer to a rice cooker or pot, add ginger, chive, dry chili, light soy sauce, oyster sauce, dark soy sauce and soybean paste, add water to the top and stew for 90 mins -Transfer to a baking tray, roast for 15 mins at 180°C, sprinkle cumin and chili powder Dish 5: Eight Treasure Stuffed Chicken (Abundance & Fortune) -Marinate the whole chicken in dark soy sauce, light soy sauce and cooking wine for 4h -Soak 1 cup of glutinous rice in water -Prepare carrots, shiitake mushrooms, bamboo shoots, Chinese cured sausage, sweet corn, green peas and chestnuts -Pan fry all ingredients, add rice and mushroom water, cook for 10 mins, then add sesame oil, light soy sauce and sugar -Stuff the chicken with rice and seal it with toothpicks -Lay chives and ginger on the bottom of the pot, put the chicken in, drizzle marinade on top, add a little cooking wine and water, cook on low fire for 1h Dish 6: Sichuan Chili Oil Fish (Surplus Every Year) -Fillet the fish and slice thinly, marinate with white pepper, cornstarch, egg white and oil -Steam the head, bones and tail with ginger and chive for 8 mins -Boil the marinated pieces in boiling water for 2 mins, lay them on top of the bones -Pan fry chili and garlic, lay on top, sprinkle spring onion and dry chili on top, then pour over hot oil, finish with steamed fish soy sauce Dish 7: Crispy Skirt Dumplings (Golden Prosperity) -Mix 1 part cornstarch, 2 parts oil and 10 parts water -Pan fry frozen dumplings on low heat until the bottom is golden -Pour in the mixture, close the lid, cook on medium-low fire for 10 mins -Open the lid and cook until all the water is gone Dish 8: Steamed “Fu” Red Bean Buns (Good Luck & Blessings) -Red dough: 100g flour 1g dry yeast 2g red yeast rice powder 60ml warm water -Yellow dough: 80g flour 1g dry yeast 2g pumpkin powder 40ml warm water -Plain dough: 300g flour 3g dry yeast 10g lard 170ml warm water -Divide the plain dough into 10 balls, roll flat and fill with red bean paste, fold and seal -Make the decoration with a mold and stick together with water -Rise to 1.5 times bigger -Steam for 18 mins and let sit for 3 mins inside the steamer ⏱ Timestamps 00:00 Chinese New Year Feast 00:35 Garlic Shrimp Glass Noodles 01:26 Four Joy Meatballs 02:29 Pak Choy with Shiitake Mushrooms 02:58 Braised & Roasted Pork Trotters 03:52 Eight Treasure Stuffed Chicken 05:10 Sichuan Chili Oil Fish 05:59 Crispy Skirt Dumplings 06:25 Steamed “Fu” Red Bean Buns 07:35 The Full Table 07:48 New Year Wishes #ChineseFood #ChineseNewYear #HomeCooking #FoodVlog #AsianFood #ComfortFood
