**Ingredients:** - 9 ounces of beef - 9 ounces of broccoli --- **Cooking Steps:** 1. **Prepare the Beef** - Choose beef with minimal connective tissue for the best texture. Inspect the beef and remove any tendons or membranes. Cut against the grain to shorten the fibers, making the beef easier to chew. Slice the beef into coin-thickness pieces. Use a meat tenderizer to gently pound the surface of the beef to increase surface area and break down muscle fibers, helping to tenderize the beef. This also allows the beef to absorb the marinade better. 2. **Marinate the Beef** - Add 1 tablespoon of soy sauce, 1/4 teaspoon of sugar, and 1 teaspoon of black pepper to the beef. Mix gently with your hands. Add 2 tablespoons of water in two batches, letting the beef absorb it. Add half an egg white, then 1/2 tablespoon of cornstarch. Add 1/2 tablespoon of cooking oil. Let it sit for 30 minutes. 3. **Clean the Broccoli** - Add salt to water and soak the broccoli for fifteen minutes to remove dust and insects. To ensure the broccoli is fully submerged, place a plate on top. Use a knife to cut the stem of each floret, and separate them into the desired size. 4. **Cook the Beef** - Heat enough cooking oil to cover the bottom of the pan over medium-high heat. Cook for 1 minute for a firmer texture, or longer for a softer texture. 6. **Final Cooking** - Add cooking oil and heat over medium heat. Add garlic and ginger, and stir-fry until fragrant. Add the broccoli and beef, then pour in 1 tablespoon of cooking wine along the side. Turn the heat to low and add 1 teaspoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of black pepper, and 1/4 teaspoon of sugar. Stir everything together, then add water. Turn the heat to high and let the sauce thicken. Slowly add the cornstarch slurry in parts until it's as thick as you like, stirring well each time.
