Join me as I walk through my meal plan and show you how to prep everything efficiently! 🥰 |MEAL PLAN| Monday: Cashew Chicken with Rice & Salad With Vinaigrette Tuesday: Beef Stroganoff with Noodles, Mashed Potatoes & Green Beans Wednesday: Loaded Sweet Potato Bar, Roasted Brussel Sprouts & Salad Thursday: Shepherds Pie (with a twist), Roasted Carrots & Corn Friday: Easy Baked Chicken Alfredo Cashew Chicken: -2lbs to 3lbs Chicken Cut Into Bite Size Pieces -2 Crowns Broccoli Cut Into Bite Size Pieces -2 Bell Peppers Largely Diced -12-16oz Mushrooms (cut about the size of the chicken) -3/4 Cup Cashews For topping Sauce Ingredients- -1/3 Soy Sauce or 1/4 Cup Coconut Aminos -1/3 Cup Rice Vinegar -2 Thumb Size Chunks of Ginger -2 to 3 Garlic Cloves -2 TBL Sesame Oil -1 TBL Raw Sugar or Sweetener Substitute -1/2 Tsp Red Pepper Flakes -1/2 Tsp Xanthan Gum, Corn Starch or Powdered Glucomannan (what I use) Instructions: -Fry chicken in an oiled skillet till cooked (add salt to season). Remove from skillet. -Oil pan, add in veggies. Allow to fry for about five minutes, stirring occasionally. -In a blender, blend all sauce ingredients. Pour over veggies. Add chicken back into the skillet and stir until tender and well combined. -Serve over rice, enjoy! My Favorite Vinaigrette: -3/4 Cup Olive Oil -1/3 Cup Apple Cider Vinegar -2 Tsp Raw Sugar or Alternate Sweetener -2 Garlic Cloves -1/2 Tsp Salt -1/2 Black Pepper Instructions: -Blend all ingredients in the blender. Store in glass jar in the refrigerator. Allow to come to room temperature before serving.
