But if you don’t have a scale, no worries! i have include cup measurements and ounces so you can still follow along. Thanks ingredients:- Milk- 240 ml, 1 cup, 8 oz Sugar-2 tbsp, 30 gm, 0.88 oz Instant dry yeast- 1 tsp, 3 gm Bread flour- 350 gm, 2 Ÿ cups,12.35 oz Salt- 1 tsp, 5 gm Vegetable oil- 40 ml, 0.17 cups, 1.35 oz Vegetable oil- 2 tbsp, 30 ml Onion-1 Spinach- 300 gm Butter-50ml, oil- 40 ml For egg wash- egg-1, milk 2 tbsp method:- Step 1: Prepare the Dough "In a bowl, mix 240 ml of milk (room temperature) with 1 tsp (3 grams) instant dry yeast. If using active dry yeast, slightly warm the milk. Add 2 tbsp sugar and whisk until smooth. Set aside while preparing dry ingredients." "Sift 350 grams bread flour in a large bowl. Add 1 tsp salt and mix to combine. Pour the yeast mixture into the flour and mix. Add 40 ml vegetable oil and combine until a soft dough forms. Cover and let rest for 30 minutes to hydrate." Step 2: Hydrate and Knead "After resting, check the dough—it should feel soft and smooth. Wet your hands and knead for 3–4 minutes until pliable. Ensure the dough is soft to avoid cracking. Cover again and rest for 30 more minutes." Step 3: Prepare the Filling "Heat 2 tbsp oil in a pan. Add 1 medium onion (sliced) and sautĂ© until soft. Add fresh spinach, cover, and cook for 3–4 minutes until wilted. Season with salt and pepper. Optionally, mix in boiled, mashed eggs for extra flavor." Step 4: Divide and Coat the Dough "Transfer the dough to a clean surface and divide into equal pieces. Shape each piece into a ball. In a dish, mix 50 ml melted butter and 40 ml vegetable oil. Coat each ball evenly and rest for 15–20 minutes." Step 5: Stretch, Fill, and Seal "Gently stretch each dough ball into a thin, transparent sheet. Add a generous amount of the spinach and egg filling in the center. Fold edges over the filling and seal tightly. Place pastries on a parchment-lined baking tray, leaving space between them." Step 6: Egg Wash and Bake "Preheat oven to 200°C (392°F). Prepare an egg wash with 1 egg yolk and 2 tbsp milk, brushing it over each pastry. Bake for 30 minutes, until golden and crispy." A stiff dough will crack during rolling. 2-Resting is Key: Allowing the dough to rest helps relax gluten, making it easier to roll thinly. 3-Butter/Oil Ratio: Use a mix of melted butter and oil to achieve crispness without burning. 4-Rolling Thinly: Roll each layer as thin as possible for maximum flakiness. Using a rolling pin or stretching gently by hand. 5-Temperature Control: Cook on medium heat to ensure even cooking without burning.
