Ingredients Chicken & Seasoning Mix 4 pounds of chicken (cut into desired pieces) 2 tbsp salt 2 tbsp black pepper 1 tbsp paprika 1 tbsp smoked paprika 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp cayenne pepper 1 tbsp brown sugar 1 tbsp dried sage 1 tbsp mustard powder 1 tbsp celery seed salt 1 tbsp dried thyme Marinade & Coating Olive oil (to coat chicken) 6 eggs 1 cup Frank’s RedHot sauce 1/2 cup mustard 3 cups all-purpose flour 2 cups cornstarch Instructions: Prepare the Seasoning Mix Combine all the seasoning ingredients in a bowl, including dried thyme. Mix thoroughly to ensure the spices are evenly distributed. Clean and Season the Chicken Wash and pat the chicken dry with paper towels. Coat the pieces with olive oil, then rub 5–6 tablespoons of the seasoning mix onto the chicken until evenly coated. Let the chicken marinate for 15–30 minutes or up to 24 hours for deeper flavor. Make the Egg Batter In a bowl, whisk together the eggs, Frank’s RedHot sauce, mustard, and 3 tablespoons of the seasoning mix. Set aside. Prepare the Flour Mixture: In another bowl, mix the flour, cornstarch, and the remaining seasoning mix for a perfectly seasoned coating. Double-Dredge the Chicken: Dredge each piece of chicken in the seasoned flour, pressing to coat thoroughly. Dip the chicken into the egg batter, ensuring it’s fully covered. Return to the seasoned flour for a second coating, pressing firmly for a thick, crispy crust. Place the coated chicken on a baking pan and let it rest for 10–15 minutes to allow the coating to set.
