Welcome to our 3-part Picnic Recipe series with Glenstal—your guide to laid-back, cheese-filled bites perfect for sunny days and soft blankets. Today’s recipe is all about simple ingredients, big flavor, and picnic perfection. 🧀✨ The humble, yet glorious, jambon! Salty ham & cheesy goodness wrapped in buttery puff pastry, these parcels are delicious hot or cold. Very simple to make, very delicious to eat! Makes 6 For the filling: 2 tbsp Glenstal butter 2 tbsp plain flour 250ml milk 100g Glenstal vintage red cheddar, grated 1 tsp flaky salt ¼ tsp ground black pepper Ingredients: 1 sheet puff pastry 50g diced ham 1 egg, beaten 50g Glenstal vintage red cheddar, grated For the filling, melt butter in a medium sized pot set over medium heat. Once melted, add the flour and stir it into the melted butter, cook for about 5 minutes while stirring slowly. Very slowly whisk in the milk, then continue to cook, while still stirring with a whisk, until mixture thickens. Add the 100g Glenstal vintage red cheddar, salt and pepper, and stir until the cheese has melted and the sauce is smooth. Remove from heat and press a round of parchment paper to the surface of the sauce to stop a skin from forming, then leave to cool for 20-30 minutes. Pre-heat oven to 200°C / 180°C fan assisted. Lay puff pastry sheet on a baking tray lined with parchment paper. Use a sharp knife or pizza cutter to cut the pastry into 6 equal squares. Spoon the cooled cheese sauce into the centre of each square then add diced ham to each. Fold the corners of the puff pastry so that the points meet in the centre and pinch them together to create small parcels. Brush the top of each pastry parcel with beaten egg, then sprinkle each with the grated cheese. Bake in the pre-heated oven until golden and the bottom of the jambons are cooked, about 20 minutes.
