Today we're tackling the mundane tasks around the home and farmstead. It can often be frustrating to do the same chores over and over again... it can even feel endless at times. BUT I have a hopeful message to share with you today! So if you're feeling overwhelmed or frustrated, pull up a chair for this chat! I hope today's video leaves you uplifted and encouraged as we walk through this spring-like day on the farm together. Thank you for joining me! Lauren RECIPES: Pancakes 2 cups flour 1 Tbsp sugar 4 tsp. baking powder 1/2 tsp. salt 2 eggs 1.5 - 1.75 cups milk (I start with 1.5 and then add more if needed) 1 tsp vanilla 1 stick butter, melted Whisk together dry ingredients. Make a well in the middle and add the wet ingredients. Mix together until well blended but don't over-mix. Allow batter to rest a few minutes while your pan heats over medium/low heat. Cook pancakes until you see small bubbles on top, flip and cook until golden brown (try to only flip once!) Serve with butter and maple syrup. Davy Crocket Cookies Mix together in the following order: 2 cups flour (all purpose) 2 cups oats (old-fashioned rolled oats, not instant) 1 cup sugar 1 cup brown sugar 1 tsp salt 1 tsp baking powder 1 tsp baking soda 1 tsp vanilla 2 eggs 1 cup oil (vegetable oil or canola oil typically... I've also used coconut oil but it does change the flavor a bit) 1-1.5 cups chocolate chips (I often measure with my heart here! Use what you have but today's combo was semi-sweet chocolate chips, milk chocolate chips and butterscotch chips. In the past, I've also done white chocolate chips and caramel nibs! So yummy!) Bake at 350 degrees for 15 minutes - don't over bake!! Allow to cool for a few minutes and then cut into squares and enjoy!
