Lamb, Goat’s Cheese & Romanian Delights Beetroot Zacusca Burgers These burgers are a little fancy, but don’t let that fool you — they’re just as quick and simple as a classic burger. With only 10 ingredients (including the rolls), this is honest, crowd-pleasing food that’s perfect for entertaining and exactly the kind of cooking we love to show off here at Outback Rustic Kitchen, right in the heart of the Central West. Best cooked over a gas BBQ for that authentic flavour, but in this video we’ve cooked them in a frypan on the stove and they’re still absolutely cracking. Ingredients (Serves 4) 600g lamb mince 1 red onion, halved ½ finely diced ½ thinly sliced 2 garlic cloves, finely chopped 3 teaspoons Worcestershire relish or Worcestershire sauce 1 teaspoon sea salt ½ teaspoon ground black pepper 150g goat’s cheese, crumbled (Cheese Upgrade (Highly Recommended) While goat’s cheese is beautiful, we highly recommend trying: Second Mouse Cheese Co – Double Cream Brie Second Mouse Cheese Co – Roobie Blue 4 tablespoons Romanian Delights Beetroot Zacusca ¼ cup rocket leaves 4 bread rolls Method Make the patties In a medium bowl, combine the lamb mince, finely diced red onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined. Shape Divide the mixture into four equal portions. Roll into balls, then flatten to about 2cm thick. This helps them cook evenly and stay flat. Cook BBQ (recommended): Preheat a gas BBQ to medium-high heat and brush the grill clean. Cook patties with the lid closed for 5 minutes per side, or until cooked through. Stovetop option: Heat a heavy frypan over medium-high heat and cook patties the same way. In the final 2 minutes, crumble goat’s cheese over each patty and allow it to soften. Toast the buns Toast the bread rolls, cut-side down, for about 1 minute until lightly golden. Assemble Build your burgers with lamb patty, rocket leaves, sliced red onion, and a generous spoon of Romanian Delights Beetroot Zacusca.
