Ingredients: 1 1/2 Cup of green lentils (dry) 2 Medium sweet potatoes 1 Can of coconut milk 1/2 Medium red onion 1 Tbsp of thyme 2 Tsp of brown sugar 3 Tbsp of olive oil 1 Tsp garlic powder 2 Cups of vegetable broth (no salt) 1 Packet of Goya Sazon seasoning 2 Green onion 1 Stock of celery 1 Tbsp of green seasoning 2 Tbsp of tomato paste Instructions: 1. Peel and cut sweet potatoes and onions. 2. Add the onions to the pot with some olive oil and saute it to your preference. 3. Add garlic powder, tomato paste and cook it down for a few minutes. 4. Add green seasoning or Better than bouillon to the pot. Followed by coconut milk, thyme, brown sugar, ginger. 5. Add Sweet potatoes, lentils, vegetable broth, sazon seasoning. Cover the pot and let it cook for 15mins on medium heat. 6. Dice green onions, celery and fresh parsley. At the 10min mark, add them to the pot to cook with the soup. Add salt and black pepper as needed. 7. Cover and let stew simmer on low heat for 5mins.
