Crabmeat Omelet Filling A good seafood omelette is always a sure crowd-pleaser at breakfast or brunch. In this dish sweet lumps of crabmeat are bathed in a cheese-laden mornay sauce that has just the slightest hint of sherry. For a slight variation in the recipe, I sometimes use gruyère cheese with its wonderfully rich and nutty flavor in place of the swiss cheese. Makes filling for 4 omelets 6 tablespoons (/4 stick) butter 1 tablespoon minced shallot 1 cup sliced fresh mushrooms 2 tablespoons dry sherry 3 tablespoons flour 1 cup Fish Stock (page 109) or bottled clam juice 1 tablespoon minced shallot 1 cup sliced fresh mushrooms 2 tablespoons dry sherry 3 tablespoons flour 1 cup Fish Stock (page 109) or bottled clam juice 1¼ cups heavy (whipping) cream ½ cup grated swiss cheese Salt, freshly ground black pepper, and freshly grated nutmeg, to taste ½ pound backfin crabmeat,picked over 2 tablespoons minced parsley or chives Melt 3 tablespoons of the butter in a heavy-bottomed saucepan. Add the shallot and cook over medium heat for 1 to 2 minutes. Add the mushrooms and continue to cook until they are soft. Increase the heat and add the sherry. Deglaze the pan, scraping up any bits on the pan bottom. Turn off the heat and remove the mushrooms with a slotted spoon. Set aside. Return the saucepan to the stove and melt the remaining 3 tablespoons butter. Stir in the flour and cook for 1 to 2 minutes, stirring con-stantly. Remove from the heat and whisk in the stock, stirring until completely smooth. Add the cream, return to the heat, and stir well until the mixture comes to a boil. Reduce the heat to low and simmer for 5 minutes, stirring often. Remove from the heat and stir in the cheese. Season with salt, pepper, and nutmeg. Gently fold in the crabmeat and stir in the parsley or chives. Remove from the heat. If omelets are going to be made right away, keep the mixture warm; otherwise, the filling can be made ahead of time, cooled, and then refrigerated until ready to use. Gently reheat filling before the omelets are prepared.
