Today's recipe is great for school nights and also provides lots of leftovers. Julia starts by making her one-pan twin roast chickens with tarragon. While the chickens cook side by side in the oven, the root vegetables roast beneath them, then finish cooking in the chicken fat on the stovetop. The final step for this dish is dressing the chicken with a fresh tarragon and parsley vinaigrette. For dessert, Julia makes a butterscotch pudding that ditches the old-school tempering method for a new technique that's less messy but just as delicious.
