One year ago, we packed up our life in Cornwall and took a leap into the unknown — leaving the rat race behind to begin living full time on our Irish homestead, restoring a derelict Irish stone cottage and building a simpler, more self-sufficient off grid life in rural Ireland. From setting up off grid power, water and waste systems, to growing our first food, learning new skills, and beginning the long journey of Irish cottage renovation, it’s been a year of hard work, risk, joy, setbacks, and quiet wins. The cottage had been abandoned for decades, the land was overgrown, and we were starting from scratch — but piece by piece, this Irish homestead rebuild has begun to take shape. There have been highs and lows, moments of doubt, and moments that reminded us exactly why we chose this life.
