Ingredients Sauce: + 3 garlic cloves, finely sliced + tbsp olive oil + 2 tsp Calabrian chillies + 1 tsp dried oregano + 1 shot vodka + 800g / 28 oz tinned peeled tomatoes, blended + 100ml / 3½ fl oz single cream + Salt and pepper Pizza: + 450g / 16 oz dough ball + Handful of mozzarella, drained & sliced + Sprinkle of grated pecorino + Flour, for dusting Method 1. Preheat Gozney to 360–380°C / 680–720°F. Heat a cast iron pan inside, then add olive oil and garlic. Sauté 1–2 mins. 2. Add chillies and oregano, return to oven 1–2 mins. 3. Add vodka to flambe and reduce. Stir in tomatoes, salt, and pepper. 4. Lower oven to 300–320°C / 570–610°F. Cook sauce 3–4 mins until slightly thickened. Stir in cream and set aside. 5. Dust surface and stretch dough into a 14-inch circle. 6. Add mozzarella, 4 tbsp vodka sauce, and pecorino. 7. Lower flame to ~260°C / 500°F. Dust peel with flour, launch pizza, and bake 5–8 mins, turning until golden. 8. Finish with more pecorino and serve hot.
