Let cool slightly in the oven with the door ajar. Date Cream Frosting: Dates are gently boiled for about 20 min until soft, blended, then mixed with soft butter and cream cheese for a naturally sweet, creamy frosting. This frosting is my own date-based cream recipe, created as a naturally sweet alternative without sugar. It has a gentle caramel-like flavor from dates and a soft, creamy texture that pairs perfectly with pumpkin muffins. Finish with crushed walnuts if desired. You get 16 muffins — soft, lightly moist, and beautifully balanced. No one ever believes they’re sugar-free and gluten-free.
