It's starting to feel like spring in Oslo! The sun shines with a new intensity after a long winter. This week I go for a walk around Oslo and enjoy the light filled streets, go to the National museum to look at a popular painting inspired by a Norwegian fairytale, take a walk along the Alna river, and cook sweet potato gnocchi. // SWEET POTATO GNOCCHI 350 grams of sweet potato and butternut squash (Half and half) 200 grams of roasted red peppers Gnocchi (I used a ready made portion for 2-3 people) 150 grams of goat's cheese 1. Boil the sweet potato and butternut squash till tender 2. Cook the gnocchi (save 150 ml of the water) 3. Put the sweet potato +butternut squash in a blender. Add the150 ml of the gnocchi water, 100 grams of the goat's cheese and half of the roasted red peppers. Blitz. 4. Season well with salt, pepper, and other spices you prefer. I add a teaspoon of calabrese peperoncini. You can use other types of chilli paste if you like a bit of heat! 5. Put the blended sauce in a pan and add the cooked gnocchi. When it's heated, add the remaining 50 grams of goat's cheese.
