Stir Fried Rice Noodles with eggs are so easy to make with very simple ingredients. Compared to my Singapore noodles, this recipe is non spicy and doesn't have meat. Enjoy! Bring a pot of water to a boil. Cook the rice noodles for about 2 minutes, or just until tender. Drain immediately and rinse under cold water to stop the cooking. Set aside. 2. Heat oil in a wok or large skillet over high heat. Add the eggs and scramble until just set. Remove from the pan and set aside. 3. Add a little more oil, then stir-fry the garlic, carrots, and bean sprouts for about 1 minute, until fragrant and slightly tender. Season with a pinch of salt. 4. Add the cooked rice noodles to the pan and toss to combine with the vegetables. 5. Return the scrambled eggs to the pan. Season with soy sauce and stir-fry for about 2 minutes, allowing the noodles to absorb the seasoning evenly. 6. Garnish with green onions and adjust seasoning with a pinch of salt if needed. Serve!
