The sauce pan is a 4-quart All-Clad D3: https://amzn.to/4jC7Rzr The induction burner is a Breville Control Freak: https://breville.oie8.net/Xmy7xy Super Simple Pasta Tomato Sauce Recipe Ingredients 1/2 to one pound of dried pasta 1 supermarket container of small tomatoes, such as cherry or grape 1 small bunch fresh basil Extra virgin olive oil Parmigiana cheese, salt, pepper, and red pepper flakes to taste Steps Set a pot of water to boil. While water is heating, prepare your ingredients. Clean, wash, and peel as necessary. Grate your cheese. Slice or press your garlic. Slice the tomatoes in half (optional). Leave the basil until later. When the water is boiling, add salt. Salty as the sea. Add the pasta and set a time for when it will first be al dente. Bring a separate large pan up to heat and add olive oil. When hot, add the tomatoes. Salt, poke, and press the tomatoes as they cook and they will release their juices. Adjust salt, pepper, and red pepper flakes. If the sauce starts to stick, thin it with some pasta water. Add the garlic. Optional: add the garlic before the tomatoes, but only if you are on your game and don't let it burn. Simmer for 8 - 9 minutes. Add the al dente pasta when ready directly to the sauce, and let it finish cooking for a minute or two in the sauce. Reserve a little pasta water in case the sauce needs thinning. Tear the fresh basil into small pieces and add. Add some of the grated cheese, reserving some for topping.
