Colorado means "red" in Spanish and refers to the rich red color produced from several dried chilies. The blend of chilies is according to your preference, but Guajillo, Ancho, Pasilla, and New Mexico chilies are the most popular. You can make Chili Colorado with beef, pork, or even chicken.
