Trying A Full English Breakfast For The First Time As An American

New Years day is the perfect time for this American to try a Full English breakfast. The only thing standing in my way was the black pudding, so I made it myself. RECIPE: Traditional Black Pudding Source: The British Cookbook Ingredients: 600g (1 lb 5 oz) Pork or beef fat 250g (9 oz) Crushed oats 225g (8 oz) Onions, finely diced 250g (9 oz) Fresh pig’s blood 12g (1/2 oz) Salt 12g (1/2 oz) Ground black pepper Instructions: Mix: Combine all ingredients into a large bowl and mix into a porridge where the blood is evenly distributed. Mold: Stuff into natural casings or a 900g (2 lb) terrine mold. Steam: Wrap in plastic wrap or foil and steam at (100⁰C) (212⁰F) for 45–60 minutes. (Note: My loaf pan took closer to two hours to get to an internal temp of 165⁰F) Chill & Fry: Cool in the fridge overnight. Slice and fry in oil over medium-high heat for 3–4 minutes per side until crispy. RECIPE: Nan’s Baked Sweet Beans Pinto beans Black beans, rinsed Red kidney beans, rinsed Onion Garlic cloves Bacon (optional) Tomato paste 1 can Tomato sauce 1-2 small cans Liquid smoke 2 T Kitchen Bouquet 2 T Mustard- a squirt Honey about a third of a cup. Garlic 1 tsp Salt 1/2 tsp - more per taste Coarse ground black pepper 1/2 tsp Ground red pepper ( careful with this- a little goes a long way) maybe 1/8 tsp 1. Cook a pot of pinto beans. ( alternate can be a large can- do not drain) 2. Drain and rinse cans of black and red beans 3. Cook some bacon in a skillet. Have the bacon for breakfast because we just need the grease. 4. Sauté a chopped onion in the grease and add in a few squashed and chopped garlic cloves. 5. Dump in the beans, including liquid from pinto beans. If using from a pot of beans, use 2-3 cups. 6. Whisk in tomato paste and sauce. 7. If you used canned pinto beans and the mixture seems dry, you can add more tomato sauce or even some chicken broth. 8. Add in all the rest. Stir and taste and adjust as needed. You can put this all in a casserole dish or cook it in the cast iron skillet. Bake at 350 degrees until it is thickening and browning some. Maybe 30-45 minutes.
