Welcome to Bonita's Kitchen! Today, we’ll be making Traditional Newfoundland Fish Cakes with salted cod, fried onions, mashed potatoes, and more. Follow along with the recipe below! Find our website here: https://www.bonitaskitchen.com Check out our cookbooks: https://www.bonitaskitchen.com/cookbook #fishcakes #homemaderecipe #newfoundlandcooking Recipe for Fish Cakes Ingredients: 1½ Cups salt cod 4 Tbsp butter 3 Tsp olive oil 1 Small onion, chopped 6 Medium potatoes 1 Large egg 2 Tsp savoury Pepper to taste (Sea salt optional) Water for boiling fish and potatoes, and for soaking fish overnight Method: Soak salt cod overnight, then drain. Fill a pot halfway with water, add the fish, and bring to a boil. In a separate pot, fill halfway with water, add ½ tsp sea salt (optional), ½ chopped onion, and potatoes. Boil until tender. In a frying pan, melt 1 tsp butter and 1 tsp olive oil, then add ½ chopped onion. Fry until golden brown. Once fish and potatoes are cooked, drain and transfer to a large bowl. Add potatoes, sautéed onions, savoury, egg, and pepper. Mash together. Flake the fish with a fork, checking for bones, then add to the bowl. Continue mashing until combined. In a small bowl, add ½ cup flour. Using an ice cream scoop, portion out the mixture, form into patties, and roll in flour. Preheat a frying pan with 1 tsp butter and 1 tsp olive oil. Fry fish cakes in batches until golden brown, about 3 minutes per side. Bonita’s Tips: Freeze extra fish cakes in freezer bags for later use. Add sea salt to potato water for better flavor. Try frying small pieces of fat pork with onion for "scrunchins" to serve on top of your fish cakes. Thank you for watching!
