If you want more contents from us, please comment and smash the like button! http://www.youtube.com/channel/UCuHbD... ●カスタードクリームの作り方 https://youtu.be/FLvJMayTa8A 【材料15センチ型1台分】 (スポンジ生地) 卵　2個(100g) グラニュー糖　60g 薄力粉　60g 無塩バター 20g (カスタードクリーム) 牛乳 160g 卵黄　2個 グラニュー糖　40g 薄力粉　10g コンスターチ5g (ムースリーヌクリーム) 上記のカスタード　全量 無塩バター　130g (シロップ) 水　20g グラニュー糖　10g サンド用苺　22個(苺の大きさにより変動) 飾りの苺　好きなだけ 冷凍ミックスベリー　お好みで (上掛け) ミロワールヌートル　30g ラズベリーピューレ　15g 【使用器具】 15㎝セルクル https://amzn.to/33qc3Nr 【作り方】 ※オーブンは160度に予熱しておく。　無塩バターは柔らかくしておく。 ①型に紙を敷く。卵にグラニュー糖を加えて湯煎にかけながら混ぜる。人肌程度に温まったら湯煎から外してリュバン状になるまで混ぜる。 ②薄力粉をふるい入れて混ぜる。溶かしておいた無塩バターを加えて混ぜる。 ③型に流しいれ、160度で30分程焼く。焼けたら型から外して常温で冷ましておく。 ④カスタードクリームを作る。卵黄にグラニュー糖を加えて白っぽくなるまで混ぜる。続いて薄力粉とコーンスターチをふるい入れて混ぜる。 ⑤温めた牛乳を少しづつ加え混ぜ、濾しながら鍋に戻し、滑らかになるまで炊く。ボウルに移してラップを密着させて氷水で冷やす。 ⑥お皿に水とグラニュー糖を合わせてレンジでチンしてシロップを作っておく。 ⑦中に挟む苺をカットしておく。冷めたスポンジを1センチにスライスしておく(二枚使用)。 ⑧ムースリーヌクリームを作る。冷めたカスタードにバニラエッセンスを加えてほぐし、柔らかくしたバターと合わせて絞り袋に詰める。 ⑨15㎝のセルクルにスポンジを敷きシロップをうつ。 ⑩半分にカットした苺をセルクルの側面に貼り付けて並べる。ヘタをとった苺を並べて隙間にムースリーヌクリームを絞る。 ⑪スポンジ生地をかぶせて少し残しておいたクリームを塗る。10分程冷やし固める。 ⑫ミロワールヌートルとラズベリーピューレを合わせたものを表面に塗る。10分程冷やす。 ⑬お湯で温めたフキンをセルクルの周りに巻き温めて外す。 ⑭イチゴなどで飾りつけする。 【ingredients for 15cm round cake】 [sponge cake] 2(100g) eggs 60g sugar 60g cake flour 20g unsalted butter [custard cream] 160g milk 2 egg yolks 40g sugar 10g cake flour 5g cornstarch [mousseline cream] custard cream 130g unsalted butter [syrup] 20g water 10g sugar 22 strawberries for filling strawberries for decoration frozen mixed berries [icing] 30g miroir neutre 15g raspberry puree 【utensil】 15cm cake ring 【Recipe】 *Preheat the oven to 160℃. Unsalted butter needs to be softened beforehand. 1. Put parchment paper on the cake pan. Add sugar to eggs and mix them in a double boiler. Bring it to body temperature, then remove from the heat and mix until it reaches the ribbon stage. 2. Add sifted cake flour, and mix well. Pour the melted unsalted butter as well. 3. Pour the batter into the cake pan, and bake at 160℃ for about 30 mins. Remove the baked cake from the pan, and let it cool at room temperature. 4. Make custard cream: Mix egg yolks and sugar until it becomes slightly white. Add sifted cake flour and cornstarch as well, and mix well. 5. Slowly pour the hot milk. Sieve the mixture and cook until it's thickened and smooth. Put it in the bowl, and cover with plastic wrap(no gap between cream and the plastic wrap), and let it chill with ice. 6. Mix water and sugar, and microwave it to melt the sugar. 7. Cut strawberries for filling. Slice the sponge cake into 1cm thick. Using 2 slices for this recipe. 8. Make the cream: Add vanilla extract to the chilled custard cream. Add it to softened butter, and mix well. 9. Place one cake layer in the cake ring, and brush syrup. 10. Arrange the sliced strawberries vertically, around the cake circle with the cut side facing out. Fill the inside with strawberries and put cream to fill the gap. 11. Top with the second cake layer, and put the rest of the cream and smooth the top. Let it chill in the fridge for about 10 mins. 12. Pour the mixture of miroir neutre and raspberry puree on top and smooth the surface. Let it chill in the fridge for about 10 mins. 13. Warm the cake ring with a hot towel, and remove the cake from the ring. 14. Decorate with strawberries and berries. #フレジエ#ClassicFraisierCake#いちごケーキ
