Planted some ginger in spring, harvesting only what I need to keep it fresh. Winter arrived in a blink, and after just one night of frost, all the leaves turned yellow. I dug up all the ginger before the frost and stored it in an insulated shed. Ginger is incredibly versatile in Chinese cooking: it removes strong odors and enhances flavor. Minced ginger adds richness to stir-fries, and in traditional Chinese medicine, it’s warming and helps dispel cold. I made ginger-red date cakes, perfect for winter, and pickled the young ginger. Also cooked some favorite winter dishes: pea and meatball soup, shredded pork with young ginger, fish head with chopped chili, braised snakehead fish, clear-water radish, and ‘fake crab’...
