⬇️⬇️English recipe follows⬇️⬇️ 煎雞： 材料： 冰鮮雞半隻 乾蔥頭5粒 薑1舊 芫荽碎適量 辣椒仔1隻 處理： 1. 冰鮮雞，加入粗鹽1湯匙，乸15分鐘，以除去雪味、腥味及加入鹹味，同時清除內臟。 2. 雞，清水沖洗乾淨，擎乾水，廚紙索乾。 3. 乾蔥頭，去皮，洗乾淨。 4. 薑，去皮，切片。 烹調： 1. 大火在鑊中燒熱油1湯匙。 2. 放雞落鑊，皮向下，轉中慢火，繼續煎。 3. 雞的一面已煎至金黃色，反轉繼續煎，加入薑片及乾蔥頭。 4. 雞又煎了大約3分鐘，兩面都煎至金黃色，轉最慢火，加入調味料： a. 生抽半湯匙 b. 蠔油半湯匙 c. 老抽1茶匙 d. 片糖半塊 轉大火，炒勻。 6. 加入清水350毫升，大火滾起，冚蓋，轉最慢火，炆12分鐘。 7. 轉大火，反轉雞，先夾起乾蔥頭，再反轉雞，炒勻至收汁。 8. 完成，上碟，灑上芫荽碎及放上辣椒仔。 9. 可享用。 Pan-fried chicken: Ingredients: Frozen chicken half No. Shallots 5 Nos. The chicken, one side has been fried into golden yellow, flip over and continue frying. Add in ginger slices and shallots. 4. The chicken, has been fried for 3 minutes, both sides have been fried into golden yellow, turn to the lowest flame. Add seasoning: a. Light soya sauce 0.5 tbsp b. Oyster sauce 0.5 tbsp c. Dark soya sauce 1 tsp d. Slab sugar half pc Turn to high flame, fry well. 6. Add in 350ml of water, heat up at high flame. Cover up the wok. Turn to the lowest flame and braise for 12 minutes. 7. Turn to high flame, flip over the chicken. Pick up the shallots. Flip over the chicken again. Fry well until the sauce becomes thick. 8. Complete. Put on plate.
