⬇️⬇️English recipe follows⬇️⬇️ 炒鱔糊 材料: 黃鱔2條 冬菇4隻 竹筍一罐 豆腐乾一件 韭黃一兩 薑一小舊 蒜蓉適量 辣椒仔一隻 處理: 1. 黃鱔,打直一開2,清除內臟,清水洗乾淨,擎乾水,切去頭部,切開一舊舊。 2. 冬菇,清水浸軟,洗乾淨,去椗,切幼條。 3. 竹筍,擎乾水,取出2件,切開一條條。 4. 韭黃,洗乾淨,切段。 5. 薑,去皮,切碎。 6. 辣椒仔,洗乾淨,切粒。 7. 豆腐乾,洗乾淨,切片。 8. 預備醬汁: a. 蠔油半湯匙 b. 生抽半湯匙 c. 陳醋半湯匙 d. 老抽1/4湯匙 e. 糖一茶匙 加入清水10毫升,攪勻。 9. 預備生粉芡。 烹調: 1. 大火在鑊內燒熱清水一升。 2. 加入: a. 油一茶匙 b. 紹興酒一湯匙 c. 鹽一茶匙 3. 鱔,放鑊內,出水30秒,擎乾水,清水沖洗乾淨,擎乾水。 4. 大火在鑊內燒熱油一湯匙。 5. 爆香薑及蒜頭。 6. 加入冬菇,炒香。 7. 其餘材料都放鑊內(剩下少許辣椒粒),炒勻。 8. 加入鱔片,炒勻。 9. 醬汁,逐少逐少加入鱔內,炒勻至收汁。 10. 生粉芡,逐少逐少加入鑊內,炒勻。 11. 上碟,灑上韭黃及辣椒粒。 12. 可享用。 Stir frying Shanghainese yellow eel Ingredients: Yello eel 2 Nos. Shaoxing wine 1 tbsp c. Salt 1 tsp 3. The eel, put in the wok. Soak for 30 seconds. Drain. Rinse with tap water. Drain. 4. Heat up 1 tbsp of oil at high flame in the wok. 5. Ginger and garlics, fry well. 6. Add in the mushrooms, fry well. 7. The remaining ingredients are to be put in the wok (except little chili cubes). Fry well. 8. Add in the eel, fry well. 9. The sauce, add in the eel little by little. Fry well until the sauce becomes thick. 10. The tapioca sauce, add in the wok little by little. Fry well. 11. Put on plate.
