年初一嘅《開飯啦》繼續係《領廚爭霸戰》＋《煮題Cook》嘅主持陣容，不過變成Jacky余健志＋張文采！ 兩位將會分享「鮮沙薑蜆蚧脆皮燒雞」、「麻香椒鹽鮑魚」，兩道菜式看似複雜但煮起上嚟又簡單又好味，啱晒要做開年飯但趕住打牌嘅你哋！ 余健志 鮮沙薑蜆蚧脆皮燒雞 材料： 三黃雞：1隻(約1 1/2至2 斤) 老抽及紹興酒：1比1份量各少許(焗雞前上色) 醃料： 粗鹽：約20克 沙薑粉：約20克 沙薑蜆蚧餡材料： 豬肉碎：80克 蜆蚧：35克 鮮沙薑：40克 老抽：少許 麻油：1茶匙 蠔油：1茶匙 蜆蚧汁：10克 糖：1茶匙 水：約60毫升 生粉水：適量（埋芡用） 沙薑醬材料： 油：約120克 咖喱葉：10克 鮮沙薑：80克 蔥：25克 沙薑粉：2克 雞粉：2克 幼鹽：2克 白醋：3克 做法： （1） 雞洗淨去內臟，抹乾水分後用粗鹽、沙薑粉抹勻全身內外，用保鮮紙包好，放入雪櫃醃一晚，備用 （2）鮮沙薑洗淨，切碎，備用。 （3）鑊中下適量油燒熱，下豬肉碎炒香，加入蜆蚧及沙薑碎炒香，將蜆蚧餡餘下材料加入炒勻，再用生粉水埋薄芡，成沙薑蜆蚧餡，備用。 （4）燒雞前，將雞從雪櫃取出，放在室溫約半小時，讓雞回溫一下，再將沙薑蜆蚧餡料釀入雞肚內，用鵝尾針封好，將老抽及紹興酒拌勻，均勻塗抹在雞身上。 （5）預熱焗爐150度，將雞入爐焗60分鐘後，將溫度升至230度再焗15-20分鐘，至雞皮金黃香脆，即可享用 沙薑醬做法： （1）咖喱葉、沙薑及蔥洗淨，完全瀝乾水份及吹乾 （2）咖喱葉摘出葉子、沙薑切碎、蔥切成蔥花 （3）除咖喱葉及油外，所有材料拌匀，燒熱油，放入咖喱葉，將咖喱葉炸至金黃出味，再分次倒入材料中拌匀成沙薑醬 食法： ～將雞肉及雞皮分別手撕出來，雞肉與沙薑蜆蚧餡料撈匀，上碟排好，上面放上雞皮，吃時伴以沙薑醬起享用 貼士： ～燒雞要做得皮脆肉嫩，一定要揀選夠肥多脂肪的雞，因為在長達個多小時的烤焗過程中，有足夠的皮下脂肪可以溶解，令雞皮更加香脆。太瘦的雞燒出來會太乾及口感很「老」 ～烤雞前在雞皮抹上混合的老抽及紹酒，除了增香之外，亦可令雞皮燒出來色澤更金黃亮麗 張文采 麻香椒鹽鮑魚 材料： 鮮鮑魚 12隻 蒜頭 8粒 乾蔥 2粒 椒鹽粉 2湯匙 生粉 4湯匙 辣椒圈、青紅椒粒 適量 花椒粉 少許 油 適量 炸乾蔥 少許 做法： （1）鮑魚洗淨瀝乾，去內臟及咀部，表面𠝹花 （2）鮑魚沾上生粉後炸至金黃色，盛起備用 （3）蒜頭切碎、乾蔥切碎、青紅甜椒切粒，備用 （4）爆香蒜粒、乾蔥粒，下甜椒粒、指天椒碎炒勻，下椒鹽及花椒粉調味，鮑魚回鍋快速翻炒出鍋 （5）碟上墊上沙律菜，鮑魚放於鮑魚殼上，即成 貼士： ～鮑魚殼略煮片刻瀝乾後可作裝飾用 《開飯啦》HOYTV足本重溫傳送門：https://hoy.tv/title/22246 《開飯啦》YOUTUBE精華重溫：https://www.youtube.com/playlist?list=PLUyFQGDoSB-jn0yJrcWa7I4H20jTSyIRI #開飯啦新年 #黃靜藍 #開飯 #團年飯 #團年 #開年 #開年飯 #新年 #煮食 #烹飪 #廚師 #自家製 #私房食譜 #食譜 #自創菜式 #hkfoodies #hkfoodie #hkfoodblogger #HOY77 #HOYTV ------------------------------------------------- Like & Follow 👍👍👍 HOY TV Facebook ► https://www.facebook.com/hkhoy HOY TV Instagram ► https://www.instagram.com/hk.hoy/ 有線新聞 Facebook ► https://www.facebook.com/icable.news 有線新聞 Instagram ► https://www.instagram.com/icable.news 有線生活 Facebook ► https://www.facebook.com/icable.life 有線生活 Instagram ► https://www.instagram.com/icable.life 有線娛樂 Facebook ► https://www.facebook.com/icable.ent 有線健康 Facebook ► https://www.facebook.com/icable.health
