For the Gastrique (Reduction): 30 ml (approx. 2 tbsp) White Wine 45 ml ml (approx. 3 tbsp) White Wine Vinegar 1 French Shallot, finely chopped 1 tbsp Fresh Tarragon, chopped 1 tbsp Fresh Chervil, chopped 1 tsp Black Peppercorns, crushed For the Sabayon & Emulsion: 2 large Egg Yolks 1 tbsp Cold Water 100g (approx. 2/3 cup) Clarified Butter, warm Salt to taste 1 tbsp Fresh Tarragon & Chervil mix, finely chopped (for finishing) Method: Create the Gastrique: In a small saucepan, combine the white wine, white wine vinegar, chopped shallots, 1 tbsp each of tarragon and chervil, and the crushed black peppercorns. Reduce: Bring the mixture to a simmer over medium heat. Let it reduce slowly until only about 1 tablespoon of liquid remains. The goal is to concentrate the flavors intensely. Cool Down: Remove the pan from the heat and let the gastrique cool down completely. This is a critical step to avoid scrambling the eggs. Make the Sabayon: Once the gastrique is cool, add the 2 egg yolks and 1 tbsp of cold water to the saucepan. Place the pan over very low heat and begin whisking continuously and vigorously. Keep whisking until the mixture becomes pale, thick, and foamy (a sabayon). You should be able to see the bottom of the pan for a split second as you whisk. Be careful not to overheat and scramble the eggs—remove from heat periodically if needed. Emulsify the Sauce: Once the sabayon is ready, remove it from the heat. Begin adding the warm clarified butter very slowly, a few drops at a time at first, while whisking constantly. Once the emulsion starts to form, you can pour the butter in a slow, steady stream. Finish and Serve: Whisk in the final tablespoon of fresh, finely chopped tarragon and chervil. Season with a pinch of salt.
