For detailed step-by-step instructions, visit the full recipe link above! **INGREDIENTS:** * 1 whole chicken (around 1.5 kg / 3.3 lbs) * Coarse sea salt and freshly cracked black pepper * 2 tablespoons (30g) butter, cold * 1 tablespoon sunflower oil (or other neutral oil) **INSTRUCTIONS:** 1. Pat the chicken completely dry with paper towels. 2. Season the cavity generously with coarse salt and peppercorns. 3. Season the entire outside of the chicken liberally with fine sea salt and black pepper. 4. Place the chicken in a roasting pan (no rack needed). 5. Tuck small pieces of cold butter between the breast and legs. 6. Place the pan into a COMPLETELY COLD, turned-off oven. 7. Close the door, turn the oven on to 200°C (400°F) using a fan-forced/convection setting. 8. Roast for approximately 70 minutes (for a 1.5kg chicken) WITHOUT opening the door. 9. Remove from the oven, transfer the chicken to a rack, cover loosely with foil, and let it rest for at least 20 minutes before carving. 10. Use the incredible pan drippings to create a delicious natural gravy (jus).
