Sibley's journey begins in the lesser-traveled corners of Buda, where Darin, a long-running social club tucked into a quiet neighborhood, reveals how local creativity thrives just outside the tourist track. There, coffee and conversation flows with fashion designer Sandra Sandor of Nanushka and bespoke milliner József Vatai, and Sibley receives a warm welcome to Budapest's edgier side: one that merges folkloric heritage with a global vision. Later, alongside travel writer Jennifer Deborah Walker, Sibley explores the Szabó Ervin Library, which was once a neo-Baroque palace and is now open to the public, and takes in all the ornate reading rooms have quietly starred in Hollywood films. From there, it’s a walk through Jewish history and architecture, pausing at the Dohány Street Synagogue, Europe’s largest, where Moorish and Christian design elements reflect Hungary’s complex spiritual layering. In the district of Budafok, Sibley meets sommelier Sebastian Giraldo Makovej for a very different kind of underground experience: a trip to Sauska’s sparkling wine cellar, part of a 100-kilometer system of limestone tunnels dating back centuries. While it may look like a Cold War-era bunker, the space is actually a historic wine-aging facility restored by Sauska in 2015, now home to their traditional-method sparkling wines. A ride on Tram 2, often called one of Europe’s most scenic rail lines, glides Sibley past the riverside to the Parliament building (with its magnificent dome that features the holy crown with the regalia), the very top of St. Stephen's Basilica (talk about a leg workout!) and toward the New York Café, a palatial turn-of-the-century landmark where artists and writers once conspired over espresso beneath gilded ceilings. This gorgeous place was once owned by the New York Insurance Company and served as a legendary haunt for Ferenc Molnár, who famously ensured it would never close by throwing its key into the Danube. Meanwhile, at the White Raven Skybar, aka the highest rooftop lounge in the entire city, Sibley soaks in the breathtaking views before heading to Stand, a Michelin-starred restaurant that redefines Hungarian cuisine through seasonal ingredients and precise technique. While there, she chats with chef and co-owner Tamás Széll to learn about each plate. And of course no trip to Budapest is complete without a thermal soak, so Sibley wraps the day at the Rudas Baths: a centuries-old Turkish pool tucked along the riverbank, where a sunrise plunge in the rooftop panorama pool offers a quiet moment of awe. As for the following day? Sibley decides to go for a lovely adventure at Castle Hill, where she takes in the sweeping views from Fisherman’s Bastion, and tracks down whimsical street sculptures ( including the beloved cartoon rabbit with checkered ears, part of the city's public art charm offensive). She also drops by the House of Music Hungary, an ambitious new cultural institution designed to merge architecture with the landscape of City Park. While there, Sibley steps into immersive installations that explore centuries of musical history, ultimately culminating in an impromptu jam session in which she conducts a digital orchestra in a surround-sound dome. The day ends, fittingly, at the Hungarian State Opera, where velvet, gold, and grandeur converge for a performance as stirring as the vibrant city itself.
