Just outside Calgary, Alberta — where the Caesar cocktail was invented in the 1960s — a bold new version of Canada’s unofficial national cocktail has gotten a smoky, meaty upgrade. The Caesar, often mistaken as Canada’s Bloody Mary, starts with a briny base of Clamato juice (that’s clam + tomato), mixed with vodka, hot sauce, Worcestershire, and served in a salt-rimmed glass. It’s savory, spicy, and full of personality. Pati Jinich visits Big Sky BBQ to try their legendary Barbecue King Caesar — a towering twist on the classic Caesar with an entire barbecue meal stacked high on top. Bartender Alexander Nguyen doesn’t just serve a Caesar — he builds an experience.
