Cooking chicken Kabsa in this easy way makes it delicious and amazing! المكونات: كوبان من أرز البسمتي طويل الحبة بصلة كبيرة، مفرومة عود قرفة ورقتان من الغار سبع حبات من الهيل عشر حبات من القرنفل ملعقة كبيرة من الثوم المبشور دجاجة كاملة، مقطعة إلى قطع ملعقة صغيرة من الكمون ملعقة صغيرة من الكزبرة ملعقة صغيرة من الفلفل الأسود ملعقة صغيرة من البابريكا نصف ملعقة صغيرة من الكركم ملعقة كبيرة من الملح ملعقتان كبيرتان من معجون الطماطم حبتان من الطماطم المفرومة ثلاث حبات فلفل حار و فلفل رومي صغير ماء ساخن (لتغطية الدجاج) ملعقتان كبيرتان من الزيت النباتي لتتبيل الدجاج قبل التحمير: ربع ملعقة صغيرة من القرفة ربع ملعقة صغيرة من الهيل ربع ملعقة صغيرة من القرنفل ربع ملعقة صغيرة من الكمون ربع ملعقة صغيرة من رقائق الفلفل الحار ربع ملعقة صغيرة من البابريكا ربع ملعقة صغيرة من الفلفل الأسود الطريقة: ١. اغسل كوبين من أرز البسمتي طويل الحبة وانقعهما لمدة ثلاثين دقيقة. ٢. افرم بصلة كبيرة. سخن القدر على نار متوسطة مع قليل من الزيت النباتي. ٣. أضف عود القرفة، ورقتي الغار، سبع حبات الهيل، وعشر حبات القرنفل. ثم أضف البصل المفروم وقلّب. ٤. أضف ملعقة كبيرة من الثوم المبشور، وقلّب حتى تفوح الرائحة. ٥. أضف الدجاج المقطع إلى القدر. ٦. تبّل بملعقة صغيرة من الكمون، الكزبرة، الفلفل الأسود، البابريكا، ونصف ملعقة صغيرة من الكركم. ٧. أضف ملعقة كبيرة من الملح، ملعقتين كبيرتين من معجون الطماطم، حبتين من الطماطم المفرومة، وثلاث حبات فلفل حار و فلفل رومي صغير. ٨. غطّ الدجاج بالماء الساخن واطبخ على نار متوسطة لمدة ثلاثين دقيقة. ٩. أخرج قطع الدجاج من القدر، وخذ مغرفة من مرق الدجاج وضعها في وعاء صغير. ١٠. أضف الأرز المنقوع إلى القدر، واطبخه على نار متوسطة حتى يقل المرق، ثم على نار هادئة لمدة خمس وعشرين دقيقة. ١١. إلى وعاء المرق، أضف ملعقة صغيرة من معجون الطماطم وملعقتين كبيرتين من الزيت النباتي. غطّ قطع الدجاج بالخليط. ١٢. تبّل الدجاج بخليط التوابل. ١٣. حمّر الدجاج في الفرن تحت الشواية، وادهنه بالسائل في الصينية ليظل رطبًا. قدّم كبسة الدجاج اللذيذة مع أرز البسمتي المطبوخ بشكل مثالي! Ingredients: Two cups long grain basmati rice One large onion, chopped Onecinnamon stick Two bay leaves Seven cardamom pods Ten cloves One tbsp grated garlic One whole chicken, cut into pieces One tsp cumin One tsp coriander One tsp black pepper 1 tsp paprika Half a tsp turmeric One tbsp salt Two tbsp tomato paste Two diced tomatoes Three whole hot peppers and a few small bell peppers Hot water (to cover chicken) Two tbsp vegetable oil For the spice mix: One fourth of a tsp cinnamon One fourth of cardamom One fourth of cloves One fourth of tsp cumin One fourth of chili flakes One fourth of paprika One fourth of black pepper Instructions: 1. Wash two cups of long grain basmati rice and soak for thirty minutes. 2. Chop one large onion. Heat a pot over medium heat with a little vegetable oil. 3. Stir in one cinnamon stick, two bay leaves, seven cardamom pods, and ten cloves. Then, add the chopped onion and sauté. 4. Add one tablespoon of grated garlic, stirring until fragrant. 5. Add one whole chicken, cut into pieces. 6. Season with one teaspoon each of cumin, coriander, black pepper, and paprika, and half a teaspoon of turmeric. 7. Add one tablespoon of salt, two tablespoons of tomato paste, two diced tomatoes, and three whole hot peppers and small bell peppers. 8. Cover the chicken with hot water, and cook over medium heat for thirty minutes. 9. Remove the chicken from the pot, and take a scoop of broth into a small bowl. 10. Add the soaked rice to the pot, and cook over medium heat until the broth reduces. Then, cook over low heat for twenty-five minutes. 11.
