Ingredients: Baked pumpkin 220-250 g Wheat flour 250 g Eggs 3 Sugar 140 g Olive oil 100 ml Baking powder 8 g Sugar and cinnamon for sprinkling • Peel the pumpkin, cut into small slices, and bake in the oven until soft. Mash the pumpkin with a fork or blender until smooth and cool. • Crack the eggs into a bowl, add the sugar, and beat until pale and about doubled in volume. • Add the olive oil and chopped pumpkin. • Add the sifted flour and baking powder, whisking well. If desired, add vanilla or orange zest to taste. • Transfer the dough to a greased pan. • Mix 2 tablespoons of sugar with 1 tablespoon of ground cinnamon and sprinkle generously over the dough. • Bake the pie in a preheated oven at 180°C (350°F) for about 40 minutes, or until set. Bake in the oven using the top-bottom setting. • Cool the pie completely before serving.
