#레드벨벳케이크#redvelvetcake#조꽁드#크리스마스케이크#christmascake#joconde * 자세한 설명을 보시려면 자막을 켜주세요.* 안녕하세요. 케이크 요청 비디오 세번째 입니다. 사실 예전 비디오에서 레드 벨벳을 정말 벨벳 처럼 만들었어요. 이번에 레드 벨벳 요청이 너무 많아서 사실 망설이다가 전혀 다른 식감의 케이크로 만들어 보았어요. 저의 초콜릿 제누아즈 레시피를 변형 한것으로 정말 보드랍고 입에서 살살 녹아요. 예전 레시피는 색소없이 홍국 쌀가루로만 만들어도 색이 나왔어요. 이번에는 케이크의 밀도가 낮고 부피가 커지다 보니 홍국쌀가루로는 한계가 있었어요. 하지만 흔히 알려진 레드벨벳 레시피에 비해 현저하게 적은 양의 색소로도 아주 붉은색을 낼 수 있었어요. 이 레시피대로 하시되 색소를 전혀 넣지 않는다면 약간 붉은 갈색의 시트가 나옵니다. 만일 홍국 쌀가루가 없다면 박력분 85g에 코코아 가루 15g 하시고 색소는 6g 이상 넣어 주어야 합니다. 제가 다양한 색소로 구워봤는데요. 가루타입 색소(ex 데코릴리프 모라색소 )가 적은 양(1g)으로도 발색이 좋았고 그 다음은 젤타입 색소(ex 윌튼색소)가 좋습니다. 그리고 워터타입 색소는 많이 넣어도 색이 잘 나지 않았어요. 이 영상에서는 흔히들 사용하시는 분들이 많을 것 같아서 윌튼색소를 3g 넣었습니다. 맛은 정말 부드럽고 풍미 좋아서 아~주 딱 입니다. 저의 아들이 지금껏? 만든 케이크 중에서 제일 맛있다고 했답니다. My fluffy Red Velvet Cake needs 3g of food coloring to get vivid red. Comparing to the normal Red Velvet Cake recipe, it is a significantly smaller amount. When you do not add any coloring, you will get a slightly reddish brown cake sheet. I tested various food colorings for this recipe. The powdered coloring was good even with a small amount (1g) (ex Deco Relief). Next, I recommend a gel-type coloring (ex. Wilton).
