Today, we're using up some vegetables from my garden in this delicious Ratatouille recipe! Instead of a "stew-like" ratatouille, this version leans more toward the classic style, featuring thinly sliced vegetables paired with a delicious and vibrant sauce. I also can't help myself with cheese, so I added freshly grated Parmigiano Reggiano for a cheesy, salty finish! This is a beautiful, fresh-tasting dish that pairs perfectly with just about any of your favorite summer meals.
