Add olive oil & spinach, sauté until wilted. Finish with salt, pepper & lime juice. 🍞 Pangritata (Crispy Herb Breadcrumbs) Ingredients: 100g (2 cups) stale bread or breadcrumbs 2 tbsp olive oil 1 garlic clove, crushed 1 tsp dried oregano 1 tsp fresh rosemary & thyme, finely chopped 2 tbsp parsley, finely chopped Salt & pepper Method: Blitz bread into coarse crumbs. Heat olive oil & garlic until fragrant. Add crumbs, herbs & fry 5 mins until golden. Stir in parsley & season. 💡 Perfect topping for pasta, soups or greens! 🥬 Kale Chips Ingredients: 1 large bunch kale (6 cups chopped) 1 tbsp olive oil 1 tbsp nutritional yeast Dried herbs/spices (BBQ, curry, etc.) Method: Preheat oven to 180°C / 350°F. Wash & dry kale thoroughly. Massage with olive oil, add seasoning & toss. Bake 20–25 mins (turn halfway) until crisp. 👉 Air fryer: 180°C – 5 mins, shake, then 2 more mins. 🕰️ Slow-Cooked Black Kale Ingredients: 1 red onion, diced 2 garlic cloves, chopped 1 head cavolo nero (6 cups chopped) 240ml (1 cup) veg stock 2 tbsp cashew cream (soak cashews in boiling water for 30 mins, blend with water, 2-1 ratio cashews to water) 2 tbsp nutritional yeast Pinch nutmeg 1 lemon, zest & juice Olive oil, salt & pepper Toast or crusty bread to serve Method: Sauté onion & chopped stalks 10 mins. Add garlic, kale leaves & half the stock. Cook covered 30 mins, stirring occasionally. Remove lid last 5–10 mins to reduce. Stir in cashew cream, nooch & nutmeg. Finish with lemon zest & juice. Serve on toast! 🥗 Sesame Kale Salad Ingredients: 1 large bunch curly kale (8 cups leaves) 1 large carrot, grated (1 cup) 1 red pepper, diced (1 cup) 4 spring onions, chopped (½ cup) 2 tbsp sesame seeds Dressing: 2 tbsp olive oil 2 tbsp toasted sesame oil 1 tsp rice vinegar or lime juice 1 tsp soy sauce 1 tsp grated fresh ginger Method: Steam kale 3–4 mins (add spring onions last minute). Shake or whisk dressing together.
