Add in the order listed. Cool, grind to a fine powder, and divide into two portions. Ingredients For the Yoghurt Marinade: ½ cauliflower, small florets (≈ 350–400g → about 3 cups) 400g extra-firm tofu, torn (≈ 14 oz / 2 ¼ cups) 200g unsweetened plant yoghurt (≈ ¾ cup) 1 tbsp lemon juice (15ml / 1 tbsp) 1 tbsp grated ginger (≈ 6g) 2 garlic cloves or 1 tsp granulated garlic 1 tsp salt Half of the ground whole-spice blend For the Curry: Remaining half of the whole-spice blend 1 tbsp neutral oil (15ml / 1 tbsp) 1 medium onion, chopped (≈ 150g / 1 cup) 3 garlic cloves, minced 1 thumb ginger, minced (≈ 1 tbsp) 1 green chilli (optional) 1 can chopped tomatoes, 400g (≈ 1 ½ cups) 400ml coconut milk or thin cashew cream (≈ 1 ⅔ cups) 2 tbsp ground almonds (≈ ⅛ cup) ½ lemon, juiced (≈ 1 tbsp) For the Tadka: 1 tbsp oil or vegan ghee (15ml / 1 tbsp) ½ tsp cumin seeds ½ tsp coriander seeds ½ tsp mustard seeds 6–8 curry leaves Pinch chilli flakes (optional) Fresh coriander, to finish Method Make the yoghurt marinade: Mix yoghurt, lemon juice, ginger, garlic, salt, and half the spice blend. Add cauliflower and tofu, coat thoroughly, and marinate for 20–30 minutes. Cook the curry sauce: Heat oil in a pan. Cook onion until deep golden. Add garlic, ginger, and chilli; cook for 1–2 minutes. Bloom the remaining spice blend: Add the second half of the spice blend. Let it sizzle for 20–30 seconds. Roast the marinated cauliflower & tofu: Spread onto a tray. Roast at 220°C / 428°F for 20–25 minutes, or air-fry at 190°C / 374°F for 12–15 minutes. Build the sauce: Add chopped tomatoes and simmer for 10–15 minutes until reduced. Add coconut milk or cashew cream along with the ground almonds, and simmer for another 10–15 minutes. Add lemon juice. Fold in the roasted tofu and cauliflower. Season to taste. Make the tadka: Heat the oil or vegan butter in a small pan. Add coriander seeds, fennel seeds, and mustard seeds. When the mustard begins to pop, add the cumin seeds and curry leaves. Let everything crackle for 20 seconds. Pour the hot tadka over the curry. Serve: Finish with fresh coriander.
