Trained in the prestigious 11 Madison Park (a 3-Michelin-Star Restaurant in New York City, USA) Chef Choi went on to open his own restaurant in Seoul Korea, dedicated to North Korean Cuisine. It's called Lee Buk Bang, and it's the only North Korean Restaurant in the world to have the Michelin Guide Plate. Chef Choi learned all the authentic North Korean recipes from his grandmother, who was born and raised in North Korea. We spent a day with him, from going to the Mang-Won Market in Seoul, to making Soondae (Korean Blood Sausage), to eating his full dinner service, which is absolutely incredible.
