Baked, stuffed chicken breast is actually very quick and easy to do - within an hour, start to finish, you will have yourself a healthy, tasty meal :) Hope you give this recipe a try How to cook spinach: https://youtu.be/X4D2nmZcYuI?si=JTd_ZiRtaIAq1kGM amazon.ca: Portugal Chicken Sauce: https://amzn.to/4gfU3to amazon.ca: chicken & rib sauce: https://amzn.to/49oYYWJ 00:00 Intro to stuffed chicken breasts 00:15 Prepping the chicken breast 01:05 Stuffing the chicken breast 06:50 Cooking the chicken 08:36 First look/plating 10:11 Taste taste 11:25 Outro Stuffed Chicken Breast Ingredients • 1 Boneless chicken breast • 4 thin slices of prosciutto • Roasted pepper (about ½ a pepper) • 4 thin slices of feta cheese (or mozzarella, or goat cheese) • 2 pieces of sun-dried tomato • 5 oz of cooked spinach • Salt & pepper to taste • Chicken BBQ sauce to taste Note: toothpicks are required to help keep the chicken roll closed Process • Preheat the oven to 375 degrees F (190 C) • We need to butterfly the chicken breast – so cut chicken breast in half, horizontally, but be sure to stop about ½ inch (13 mm) before the end. • Open the breast and lay it flat on the counter. Place a piece of plastic on top and pound it all over, to about ½ inch (13 mm) thick • Now start to add layers…place 2 slices of prosciutto on top, then add the roasted peppers, the feta, the sun-dried tomatoes, a layer of cooked spinach, and then finish with another layer of prosciutto • Grab one end and begin to roll it into a ball – roll and tuck as you go, keeping a bit of pressure on as well • Then hold the roll closed with toothpicks • Add salt all around to taste (remember the prosciutto is salted, and so is the feta and the sun-dried tomato, so be careful not to add too much salt) • Add black pepper to taste • Place a piece of parchment paper on a cookie sheet, add some BBQ sauce to the paper and place the chicken breast on top. Then add BBQ sauce all over the chicken breast • Place in preheated oven and cook for 25 – 30 minutes, or until the internal temp reaches 165 degrees F (74 C) • Remove from oven, baste it with any of the hot juices and add more BBQ sauce to taste.
