MAIN INGREDIENTS - Minced pork – 400 g - Garlic – 5 cloves - Small red chillies – 2–3 (more if you like it spicier) - Large red chilli – 1 (sliced, for colour) - Thai holy basil leaves – A generous handful (or Italian basil if Thai basil isn’t available) - Vegetable oil – 2 tbsp (for cooking the stir-fry) SAUCES & SEASONINGS - Oyster sauce (Megachef or Healthy Boy) – 1 tbsp - Golden Mountain seasoning sauce – 1 tsp - Healthy Boy dark soy sauce – 1 tsp - Fish sauce – 1 tsp - White sugar – ½ tsp - Ground white pepper – ½ tsp FOR SERVING - Eggs – 2 (for frying, one per person) - Cooking oil – Enough for shallow or crispy frying the eggs - Steamed jasmine rice – For serving (optional but traditional) 👍 Subscribe to this channel for more of Brighton’s best chefs creating their signature dishes.
