You can use egg or cold water pinch of salt For the filling: 550 g (≈2 cups) roasted pumpkin purée (from ~1 kg raw pumpkin) 250 g (1 cup) mascarpone 60 g (¼ cup) brown butter (melted & cooled) 80 g (⅓ cup + 1 tbsp) granulated sugar 100 g (½ cup) light brown sugar 4 large eggs 1 ½ tsp ground cinnamon ½ tsp ground nutmeg pinch of ground cloves 1 tsp vanilla extract pinch of salt 👨‍🍳 Method: Prepare the pumpkin purée: Roast pumpkin halves at 190°C for 40–50 minutes until soft.
