This puff pastry pizza recipe is my go-to when I want something easy, quick, and insanely delicious. Perfect for a last-minute dinner, snack, or cheat day meal. Flaky puff pastry, rich sofrito, and your choice of protein make this a must-try! 🧅 Ingredients: 1 sheet puff pastry Sofrito: 1 large onion, 1 large bell pepper, optional Mushrooms, garlic & thyme, splash of white wine Sauce: 1 very ripe tomato or 2–3 tbsp crushed tomato Toppings: 1 ball bufala mozzarella (dried), 1 can tuna (or cooked chicken, pork, or beef) and Basil, and or Chives 👨‍🍳 Method: Pre-bake both sides of the puff pastry. Sauté the sofrito until soft or caramelized. Build: Puff pastry, sauce, sofrito, protein, cheese. Bake at 200°C until golden.
