No Brandade police please. This is the way I make it and it works. Perfect accompany has to be a crispy pigs head, often served Upstairs @ trinity Cod Brandade 1 cod fillet – loin removed – tail only 6 washed/cooked potatoes 4 cloves garlic peeled 50g chopped flat leaf parsley 200g milk 200g olive oil Salt Wash 6 potatoes and bake at 180c until soft, around 1 hour. Take the cod fillet and remove the skin, salt liberally with Maldon salt for 20 minutes, wash the fish in a bowl of cold water. Drain well. Heat a heavy based saute pan and add the olive oil, add the sliced garlic for 30 seconds, then add the cod, fry until it begins to soften and break apart, fry for ¾ minutes. Press the cooked potatoes through a tamis. Using a kitchenaid mixer mix the cooked cod with the hot cooked potato. Emulsify in more olive oil and season with salt, lemon and chopped flat leaf parsley.
