Please share with the community in the Comments: What dream or new direction would you explore if you knew reinvention was possible for you? #ReinventionAfter50 #ThrivingGracefully #WomenOver50 RECIPE: LESLIE'S LOW-CARB GRANOLA Dry Ingredients: ¾ c raw walnuts or pecans, chopped into large pieces (optional) ½ c. raw pumpkin seeds (pepitas) ¾ c. raw almonds ½ c. raw cashews ½ c. unsweetened shredded coconut ¼ c. hulled hemp seeds Wet Ingredients: 3 T. pure maple syrup (or sugar-free alternative) ¼ c. extra virgin olive oil 1 tsp. vanilla extract 2 tsp. ground cinnamon ½ tsp. fine sea salt Directions: Preheat oven to 300 F. Prepare a rimmed baking sheet – line with parchment paper. Mix all dry ingredients in a large bowl. Whisk wet ingredients together with spices; pour over nut and seed mixture and combine well. Spread mixture evenly on baking sheet. Bake for 15 minutes. Stir, spread out evenly again, bake for an additional 10-15 minutes (watch to prevent burning). Remove from oven and let cool on baking sheet. Once completely cooled, store in an airtight container – 1 week at room temperature, or freeze for up to 2 months. Serve over Greek yogurt.
